Ingredients

passion fruits

100 g

of White Cooking Chocolate

300 g

of plain fromage blanc 40% fat

2 sheets

of gelatine

small mango

1

small fresh pineapple

2 tbsps

of single cream

OPTIFIBRE® doses

1. Soak the sheets of gelatine in cold water. Chop the chocolate and melt it in a bowl in the microwave for 2 minutes at 500W.

2. Heat the cream and add the drained gelatine. Add the OPTIFIBRE and stir. Add this mixture to the chocolate and gradually add the fromage blanc. Pour into 4 shot glasses and chill in the fridge for two hours.

3. Peel the pineapple and the mango and then cut into small dice.Add the passion fruit seeds and stir. Spread the fruit tartare over the panna cotta just before serving.
